Is utterly disgusting.
The photo below is of a "gourmet" French sausage, its called Andouilette and is made from tripe. Tripe is amazing stuff, its cheap, tasty, filling. It ticks all the right boxes, except the way the french cook it. This thing stank of sewage (in fact, most of France seems to smell of sewage but thats another rant for another time). The "tripe" seemed to consist of nothing more than gristle and connective tissue, making something that should have been tender and juicy, very dry and chewy.
To top it all, when I cut open the skin to have a look through this thing (to see if there were any scraps worth picking over), my 3 year old son turned to me and said "why are you eating cat food Daddy?".
Says it all doesn't it.
